Porotta Recipe

Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup water
  • 1 tablespoon oil
  • 1/4 teaspoon cardamom powder

Instructions:

  1. Combine dry ingredients: In a large bowl, mix together the flour and salt.
  2. Add wet ingredients: Gradually add water, oil, and cardamom powder to the dry ingredients, mixing until a dough forms.
  3. Knead: Knead the dough for 5-7 minutes until smooth and elastic.
  4. Rest: Cover the dough with a damp cloth and let it rest for 30 minutes.
  5. Divide: Divide the dough into small balls, about the size of a golf ball.
  6. Roll: Roll each ball into a thin, round shape using a rolling pin.
  7. Cook: Heat a tawa (griddle) over medium heat. Place the rolled porotta on the tawa and cook for 1-2 minutes per side, or until golden brown and puffed up.

Beef Curry Recipe

Ingredients:

  • 1 pound beef stew meat, cut into cubes
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust to taste)  
  • 1 can (14.5 oz) coconut milk
  • 1 cup beef broth
  • 1 tablespoon garam masala
  • Salt to taste
  • Fresh cilantro for garnish

Instructions:

  1. Brown beef: Heat some oil in a large pot over medium-high heat. Add the beef cubes and brown on all sides.
  2. Sauté aromatics: Add the onion, garlic, and ginger to the pot and sauté until fragrant.
  3. Add spices: Stir in the cumin, coriander, turmeric, red chili powder, and garam masala. Cook for 30 seconds.
  4. Simmer: Pour in the coconut milk and beef broth. Bring to a boil, then reduce heat and simmer for 1-1.5 hours, or until the beef is tender.
  5. Season: Adjust the salt to taste. Garnish with fresh cilantro.
